Prosciutto
This dry-cured ham is one layer of the delicious build up of flavours in a wellington. Prosciutto di Parma is the most famous type of prosciutto with the highest form of protection (PDO). It is made from the hind leg of a pig and is sliced wafer thin for a deliciously subtle balance of meat and the thin strip of fat that is characteristic to every slice. The process of making prosciutto can take between 9 months and 2 years and is closely guarded to ensure it's made to the highest possible standard.
